PACHERENC DU VIC-BILH SEC 2023
Awarded 2 stars by the 2026 Hachette Wine Guide, this 2023 Pacherenc du Vic-Bilh Sec blends 80% Petit Manseng with Petit Courbu to create a wine that is both rich and vibrant. The hillside terroir (east-west facing) with gravelly soils and a clay subsoil contributes to excellent ripening and minerality. The vines, pruned using the single Guyot method and harvested by hand, are cultivated using sustainable practices.
Winemaking: whole-cluster pressing, settling, then slow fermentation at low temperature; aged in stainless steel tanks on fine lees. The nose reveals complex notes of candied apricot, mango, grapefruit, and citron, with hints of honey and blond tobacco. The palate, ample and silky, finishes with a fresh and lingering aftertaste—a masterful balance, even more appealing after a short period of aging.
Pairings: aperitif, fish, seafood, white meats, tagine, sushi. Recommended cheeses: Saint-Nectaire, Beaufort, Comté, goat cheese from Poitou, sheep cheese from the Pyrenees. Serving temperature: 10–12°C.
