COOKING INSTRUCTIONS:

After removing as much fat as possible from around the legs, place them in a pan over low heat to completely render the remaining fat. You can then return the rendered fat to the jar for future use. Next, place the confit skin-side down over high heat until the skin is crispy. Finish by cooking for one minute on the other side. To maintain the meat's firmness, avoid overcooking.
